Jonah Crab and Asparagus Frittata
Jonah Crab and Asparagus Frittata
Serves 6-8
Ingredients
8oz Jonah Crab meat
8 eggs
1/3 cup milk
1/4 cup grated Parmesan cheese
1 Tbsp fresh tarragon or basil
1/2 tsp black pepper
1/4 tsp salt
2 tsp olive oil
3 garlic cloves, minced
1/2 cups asparagus
2 Tbsp water
1 red bell pepper, diced
2 Tbsp parsley, chopped
Directions
- Preheat broiler
- In a bowl, whisk together eggs, milk, Parmesan cheese, tarrago or basil, black pepper, and salt.
- Heat oil over medium heat in a large broilerproof skillet, such as a large cast iron, add the onion and garlic. Cook for about 2 minutes or until fragrant.
- Add asparagus and water. Cover and cook for 4 to 5 minutes or until asparagus is tender. Drain and discard any liquid remaining in the skillet.
- Evenly sprinkle the crab and bell pepper over asparagus.
- Pour egg mixture over vegetables and crab in the skillet. Cover over medium heat.
- Ad the mixture starts to set run a spatula around the edge of the skillet, lifting mixture to ensure the uncooked portion flows underneath and gets cooked. Continue doing this until the egg mixture is almost fully set.
- Place skillet under the broilers 4-5 inches from the heat. Broil 1 to 2 minutes or until top is just set. Alternatively to broiling, you can preheat your oven to 400 degrees and cook for about 5 minutes. All ovens are different!
- Cut into wedges, sprinkle with parsley and serve with your favorite hot sauce!
