Miso Glazed Hake

Miso Glazed Hake
Serves 4


1 lb hake filet
2 Tbsp mirin
2 Tbsps rice wine vinegar
1/3 cup white miso
2 Tbsp sugar
Neutral-tasting oil, for baking sheet


  1. Combine mirin, vinegar, miso, and sugar in a small saucepan. Whisking constantly, cook over medium heat until sugar has dissolved. 
  2. Remove from heat, transfer glazed to a small bowl and let cool completely. 
  3. Heat broiler, with rack 6 inches from heat source. Coat a baking sheet lightly with oil. Arrange fish on sheet, and brush generously with miso glaze.
  4. Broil until filets are browned on top, 6 to 8 minutes. If the top of the fish browns before it's cooked through, cover loosely with foil.
